Raw Overhaul: Tacos

Okay, full disclosure, this dish is nothing like tacos in flavour or really texture. And my goal in playing around with Raw Overhauls is not to try and re-create the dish exactly, but to show people how fun, easy and tasty adding Raw Food to their diets can be. By linking it to food they already know, it tends to sound less daunting.

Raw Tacos have two elements. First, the taco “shell”, which is a sturdy green leaf, and the filling, which can be a mix of whatever you’d like.



Here I used cherry tomatoes, corn, olives, celery and kale mixed with tahini, tomato paste, olive oil and himalayan sea salt. Mix all your filling ingredients, and fill the “shells” and eat. The shells I used were nutrient free iceberg lettuce, but my favourite is baby cos. That’s Romaine for the American’s that asked!

This is one of the simplest raw vegan meals I’ve made so far and it’s truly satisfying to boot!


Raw Overhaul: Pesto Pasta

A great thing about being high raw is that at the end of a massive workday, you know you can throw together a massive salad with lots of goodies and you’re set. But last night I was feeling creative and I wanted to use the big bunch of basil I bought at the Farmer’s Market. So, inspired by a post the lovely Gena wrote on Choosing Raw, I made raw Zucchini Noodles with Pesto.

Making the Pesto was easy peasy. I put a whole lots of Basil, some Pinenuts, Olive Oil, a Splash of Lemon Juice and salt in the Magic Bullet and blended til smooth. After taste testing, I added a little more Basil and a spoonful of Tahini and blended again. Pretty much delicious.
Then came the noodles. Using the tool we use to julienne carrots (henceforth to be known as the NNG – niggly noodle thingy) I reduced 4 Zukes to noodlely goodness.

Saying that making noodles from Zukes with the NNG was time consuming is very much the truth. I wouldn’t want to make this for more than 1 person! Since I loved this dish, I’m going to invest in a spiralizer to make it much easier. Alternately, you could probably cut very thin strips of Zuke or even slice it really thinly to get little round flakes.
When the noodles were finished, I just added the Pesto:

Ate it with a massive massaged Kale salad. And ate it ALL. My first foray into Raw Main dishes was a fabulous success. Non-vegan flatmate approved and everything.



Raw Overhaul: Sushi

One of my favourite lunches has always been Sushi, it’s super easy, I love Wasabi and Ginger and you get to have Miso with it! But I’ve never been a fan of fish in general, and raw in particular, and lately I’ve been noticing my sushi lunches make me feel extra heavy and sleepy after eating. So I thought I’d give it a raw overhaul.

Without further ado I present: Sprouty Salad Sushi. Hmm, perhaps the name needs some work, but this is really tasty.

And, added bonus, it’s really simple to make. All you need is a few sheets of Nori (preferably untoasted) and a big salad of your choice, with sprouts. It also helps to have a big pastry brush if you prefer your sushi uncrispy, like me.
Basically, just make your salad, (I used Mung Bean sporuts, Adzuki sprous, Avocado, Sundried Tomatoes, Sauerkraut and Karengo, dressed with Soy, Ginger and Lemon) then wrap it up. Use the pastry brush, or something similar, to wet at least the end of the roll, so it sticks closed.
Make as many rolls as you’d like and eat with the leftover salad, if there is any! I’ve made this a few times in different variations. This one had miso paste brushed on the inside and a leafy green salad:
Nori, like all sea vegetables, is full of minerals and trace elements but lacks the fishy taste some of the others have, making it a winner in my book! This meal is so simple and a really great change from the usual salad lunch I have, while still being full of goodies and goodness.
After my success with this, I’m excited to try more (simple) raw overhauls. Feel free to make suggestions.
